C125SC(Lohmann) - Ultra pure, low alloy carbon steel. 125SC is made from Armco pure iron #4, purest commercially available iron. Not sure whether or not 125SC is made by Lohmann for Achim Wirtz exclusively or available for general public. Main highlight is the purity. While Sulfur levels are on par with Shirogami 1 steel(which has the reputation for its purity), Phosphorus levels are ~8 times lower. If you want finest polished edge, 125SC would be the one I guess. Very fine grained, good edge stability, and overall performance for cutting.
