After using Nakiris for few months, I've decided that small one is a welcomed addition to my kitchen knives collection. Mincing garlic and shallots definitely calls for thin, smaller blade.

Just ordered custom honyaki gyuto from Watanabe. 270mm long, 3mm thick. That'll be a cutter.

Neat small knife from Watanabe is here. 85mm blade, will be handy for mincing small veggies. Aogami steel, 62-64 HRC.

Kumagaro hammer finish Gyuto and Suminagashi Nakiri Hocho ordered. Kumagaro went straight for rehandling. Nakiri will be home soon. It's more stainless, so it'll be a beater for knife abuser folks around my kitchen. Watanabe Nakiri and Hontan Seiko Deba are going to be rehandled too.
