In use and evaluation

This page is an answer to the frequent question, what do I use, prefer like, etc. I do like most of the knives in my collection. As of the use, obviously I can not use 150+ knives at the same time. I do have my preferences, although the number of the knives I like a lot is much greater than I can carry on me or use at a time ;) Therefore I have to rotate. The list changes constantly, as new knives arrive, I rediscover the old ones, just a mood, etc. Well, no complaints. I prefer it that way. Variety, choice, much more interesting ;).
