Haven't seen it for a while, then, G-48 santoku ended up with me once again, to get sharpening job done. I guess I forgot what it was since then :) Anyway, sharpened, played with it a little. It's a weird santoku, come to think of it, the point, blade geometry, etc. Still, it's a good knife fro average guy concerned with quality knives. It wont' match performance of the true Japanese style santokus, but for westernized knife, it's pretty good.

For several name records W-Nr names were listed as DIN standard names. Both are German, but standards are different.

One of the best looking knives in my quite large kitchen knives collection, and one of the best performers as well. What more would you ask form a knife, or any other tool for that matter. Had it more than a year, and this was one of the backlogged reviews to post. The new handle is still in making process with Stefan, but other than that, the knife is just super.

Finally I did it :) For Android smartphones, 1.6 and higher, the chart or database application is out. It's a snapshot of October 5, 2010, later I'll add online synchronization. Most of the online functionality from the Interactive Knife Steel Composition chart is there, including comparison graphs.

Visitor gave heads up on that. Thanks! New alloy - Aichi ZA-18 steel. Apparently created to compete and outperform Takefu VG-10 steel. Slightly more Carbon, Chrome, Cobalt and Molybdenum. One thing I am not clear is the Vanadium content. VG-10 contains 0.10% to 0.30% which besides refining grain can affect abrasive wear resistance, but in those amounts probably not so much. I'm trying ot get more precise information.

My first knife from William Henry, and the deciding factor was the Hitachi ZDP-189 steel. Classic gentleman's folder, very high quality and craftsmanship, hi-tech materials from blade to handle, and to complement all that, super duper blade steel. Details in the review. Very positive results and I am very happy with the knife. ZDP-189 is not brittle, and that was covered in Super Hard vs. Soft Edges article.
