Just packed up Watanabe Miroshi Deba and Aritsugu Kamagata Usuba and sending to Dave Martell tomorrow morning first thing. New handles are of course form Stefan Keller. Really nice handles those very good blades deserve.

Tojiro Hammer Finish line

Tojiro knives just introduced hammer finish line. Looks pretty much like Kumagoro hammer Finish gyuto on this pic attached here. I was hoping it was Aogami steel, at high hardness,s alas I was wrong. it's one of their budget lines.

Review is up. To summarize, it's a very nice medium grit stone. It was more necessary then the Naniwa Chosera stone I've also added to my sharpening stone collection. Anyway, after Bester 700 grit stone this one is a must before going to higher grits. Produces a lot smoother bevels, and saves a lot of followup stone and time :)

Go figure. Ikea just came out with the new chefs knife. Laminated blade, VG-10 steel, Pakkawood handle. The description doesn't exactly say VG-10, but it's stamped on the blade, that's the word from those who saw it. At that price, it's a pretty attractive buy. Made in China, but I donno neither RC, now the overall quality. What I do know, is that that chefs knife is the only VG-10 knife in Slitbar line.

Well, the photos are up and you can see the knife in person, in all its beauty. It's pretty much the longest blade I have in my kitchen knife collection and truly one of the most beautiful.

Super nice superstone :) Synthetic whetstone, works exceptionally well. Minimal water consumption, cuts fast, produces very nice, bright finish. Perfect before Kitayama 12k or higher grits. Love it.

At 12:05pm the knife got to me. What a knife it is! Kintaro Ame pattern looks beautiful. 330mm long blade, blazing sharp. Watanabe surpassed himself I guess :) Photos are coming soon.

Well, the waiting is almost over! The blade cleared the customs and arrived at my local PO at 6:10am. So, if everything goes smoothly I should have it in my possession around this noon :) Waiting is a biatch, but that knife... Uhmm...

Around 1.5 hours of cutting on its first use. All vegetables obviously, but really wide variety, 18 different kinds. Everything from soft leaves to harder ingredients like carrots and broccoli. I've sharpened it last weekend, total edge angle is around 20 deg. in my estimate. As far as cutting ability goes this is a superb blade. More like a Guillotine as far as cutting goes. Noticeably heavier than the Takeda cleaver, but still, comfortable to use, I didn't have any problem using it for more than hour. Overall, first impression is better than very good :) Preliminary review coming soon.
