Sent me a very cranky email today, based on, or because of my article - How to choose a kitchen knife. I do get my fair share of frustrated emails, but this one is rather illustrative, and quite relevant to the 'Of Chefs And Knives' chapter of the said article. I'll update that section this weekend.

Just received 3 knives from Phil Wilson, two of those were sent to him for the kydex sheaths, CPM 10V hunter knife, and CPM S125V Meadows Semi Skinner, the last one is the Meadows Skinner from CPM M4 steel, 65HRC if I am not mistaken, I'll confirm with Phil.

When averages calculation was on the table and legend still contained range values, even though the averages were displayed. Now it's consistent, if averages are selected the table or legend shows calculated averages.

Well, another good news. Vanadis 4 knife is moving forward. The blade is ready and all that's left is the handle. Another months or so, he's a busy guy :).

The graph now can display alloy compositions in three different modes, as element mass %, as atom count and as molar mass %. If you are unfamiliar with Molar mass, you can look up the details on wikipedia, but it's actually quite simple, the same number of the atoms for any element has the mass in grams of the element atomic mass, except the number is real big :) 6.0221415 E23. It's real interesting to look at atom counts and molar mass, because mass % doesn't really show the whole picture to analyze the steel.

I couldn't find suitable tester here in SF bay myself, but one of the foodies, Rotman sent his A-Type to test in Germany. Test results should be in about 2 weeks from now. Current popular guesses are Lohman PGK steel, Bohler-Uddeholm K340 steel, VascoWear. Well, I figure Latrobe LSS PGK steel might be a good candidate as well, since it's almost a duplicate of the Lohmann PGK.

Added about ten new alloy compositions from Lohmann, German steel maker. Most noteable is PGK steel. Plus over 50 names for other alloys already in the steel composition chart.
