ApexUltra(ApexUltra) - ApexUltra is one more steel developed specifically with the cutlery use in mind. The development was a collaboration between three well known personalities in the knife world: Tobias Hangler, Marco Guldimann and Larrin Thomas. As far as I know, this is the first collaboration, but you might be aware of Larrin's MagnaCut steel which he developed in early 2021. According to Tobias, the goal was to develop a new steel, with a special focus on high purity and homogeneity(using ESR, ensuring low S and P content, etc) that overcomes the issues other steels have in high hardness range such as - grain boundary carbides, low toughness, larger carbides. ApexUltra should not only provide high hardness and edge retention, but also be forging friendly, and designed to be hardenable using the typical processes and tools of the knifemakers and bladesmiths. While the later(ease of hardenability using conventional means) may not sound terribly important to a knife user, it really is, in that, more makers can harden the steel easier and optimally without exotic equipment or sending to external sources, etc. As a knife user, one would get a better performing knife. ApexUltra is well suited for both, forging and stock removal. Marcos and Tobias were looking for a high performance steel in the kitchen knives, therefore it should hold an acute, fine edge very well. I'm certainly looking forward to getting a solid chef's knife in ApexUltra. Composition-wise, ApexUltra is closer to Hitachi Aogami Super steel, although ApexUltra does have more Chromium(Cr) and Tungsten(W). Definitely will be able to achieve targeted 66HRC. Overall, ApexUltra should make an excellent choice for high performance, aggressive cutters, not just kitchen knives, but folders and fixed blades optimized for cutting performance.
